Yum, look what I found at the farmer’s market this week. Think peach cobbler. Or peach ice cream. And oh yeah, straight off the tree (or straight out of the basket). I’m thinking it’s also time to figure out how to freeze peaches for fruit smoothies.
These peaches were ripening really fast, so I needed to take care of them right away. There are differing opinions on the internet on how to freeze peaches. I’m just sharing what I did to make them convenient for my smoothie concoctions.
I peeled several, then Richard suggested I blanch them to make the peel easier to remove. He dropped the peaches in simmering water for about 1 minute and then put them in a bowl of ice water to stop them from cooking. Blanching made a huge difference- most of the peel practically slid right off.
To prevent browning, I placed cold water in a bowl and added lemon juice, maybe 1 tablespoon lemon juice to 2 cups cold water.
I cut each peach into chunks. letting the pieces drop into the lemon water. Then immediately scooped them out and drained in a colander.
Just peeled- oh, my! These peaches were so juicy, there may have been juice running down my face arms as I ate one or two peeled them.
Where was I? Oh, yeah, freezing peaches. I didn’t want the peaches to freeze into one big peachy glob, so I spread them on a cookie sheet lined with waxed paper and placed into the freezer. (You probably don’t need the waxed paper. I had to peel it off some of the peaches after they froze.)
Once they were mostly frozen, I placed them in plastic snack bags, then put those into gallon size freezer bags.
Each baggie should be the perfect amount for breakfast smoothies. Or for a cold snack when hot flashes hit. Just guessing on that one.
This basket of peaches yielded about 40- 45 snack baggies. That doesn’t include a dozen peaches that kind of disappeared.
In case you’re wondering, here’s how I make my breakfast smoothies.
Fill a glass about 2/3 full with unsweetened almond milk, pour into blender. Add 2- 3 tablespoons of whey powder. Throw in some frozen fruit. (Peaches, anyone?) Add about a tablespoon of honey, a dash or two of cinnamon, and if you like, a tablespoon of cocoa powder. Blend until slushy. If you get carried away with the add-ins and it won’t all fit in your glass, put the extra in the freezer for an afternoon snack.
You may notice that, unlike most fruit smoothies, mine doesn’t contain bananas. While suffering with a miserable stomach bug when I was a kid, Mom gave me a banana flavored medicine. Haven’t been able to eat bananas since. Makes me kind of shudder just thinking about that experience. Yeah, decades later.
